There are three main types of frosting’s; butter-cream, whipped cream and rolled fondant. My whipped cream is typically reserved for fruit cakes, special toppings and my famous Tuxedo Cupcakes but can be applied to all cake tops as long as refrigeration is not an issue. Rolled Fondant is used to provide a smooth, solid finish to a cake and can be used for shapes and sculpting as well.
